Detroit-Style got its start in the 1940s when local bakers in Detroit swapped round pans for rectangular steel trays borrowed straight from the auto factories. The dough was baked into a crisp, golden crust with a light and airy interior. The cheese went edge to edge in those pans, creating a crunchy crown deemed frico. And to really differentiate it, tomato sauce was layered on top of the cheese instead of under it.
Alongside Detroit-Style, there’s also Deep Dish, a close cousin baked in the same rectangular pan and sharing the same dough, but built differently. With Deep Dish, the sauce goes directly on the dough before baking, rather than on top of the cheese. That switch makes for a heartier, richer bite. It’s the same craveable corner, just a different personality.
